Easy Christmas Desserts to Make This Year

It’s almost Christmas! You need these two goodies on your counter!

Here are two, easy to make Christmas recipes for your family (or just you) to enjoy.

Christmas in quarantine is the perfect time to have groceries delivered to your house, make yummy goodies, and then eat them while drinking a hot mocha (or a peppermint kahlua if that is more your thing).

These are some of my family favorites we have been making for years! I cannot wait to make them with my younger cousins..and eventually kiddos!

Peanut Candy Clusters

Ingredients:

  • 3 cups of crisped rice cereal
  • 2 pounds of candiquik
  • 1 cup of peanut butter
  • 2 cups of Christmas colored MnMs
  • 3 cups of mini marshmallows
  • 2 cups of cashew halves
  • Wax Paper

Directions:

  • Prepare sheets of wax paper, you will need about 4, 1ft sheets.
  • Mix together the dry ingredients in a large mixing bowl.
  • Melt the CandiQuick according to the instructions on the package
  • Add in the melted candy to the large mixing bowl and stir until clumps can be formed.
  • Scoop a spoonful of the now melted candy mix onto the parchment paper and wait for the candy to harden. It will harden quickly, so don’t let the goodies sit for too long in the bowl.
  • Sneak a bite of cooling candy to enjoy the sweetness before you serve to your guests (or to you).

Peanut Butter Balls

Ingredients:

  • 1.5 cups peanut butter (not a natural brand)
  • 2 sticks of butter
  • 4 cups of powdered sugar
  • 1 cube of paraffin (usually with canning supplies)
  • 1 large bag and 1 small bag of semi-sweet chocolate chips
  • a few toothpicks and a fork
  • wax paper

Directions:

Melt the peanut butter and butter in a mixing bowl.

Mix the powdered sugar in with the peanut butter and butter until you can make spoon sized balls to freeze.

Freeze the peanut butter balls.

Prepare the chocolate and paraffin. Melt the two together. The easiest way is to do this on stovetop and melt the paraffin first and then the chocolate as the paraffin takes longer to melt. It can also be done in the microwave.

Dunk the peanut butter balls into the chocolate and set them on the wax paper to harden. We have found it easiest to use a toothpick with a fork to scoop the ball out of the chocolate.
